Couscous Salad

Ingredients
  Uncooked couscous 1 Cup (16 tbs) (Wheat-Grain Semolina)
  Chicken broth 1 1⁄2 Cup (24 tbs)
  Slivered almonds 1⁄2 Cup (8 tbs), toasted
  Raisins 1⁄2 Cup (8 tbs)
  Peaches 1⁄2 Cup (8 tbs), chopped
  Sliced green onions with tops 1⁄4 Cup (4 tbs)
  Unpeeled cucumber 1 Medium, seeded and chopped
Directions

1. Mix couscous and chicken broth in 2-quart casserole. Cover tightly and microwave on high 5 to 9 minutes or until liquid is absorbed. Stir in remaining ingredients except Curry Dressing. Toss couscous mixture and Curry Dressing.
2. Cover and refrigerate at least 4 hours until chilled. Stir before serving.
