6 , trimmed to 5 inch in length (Use White Inner Stalks Only)

1 , pared and diced small
1 Clove (5 gm), smashed and chopped
1 Cup (16 tbs), heated
Chopped fresh parsley
Preheat oven to 350 Â°F (180 Â°C).
Place celery hearts in saucepan filled with salted, boiling water. Partly cover and cook 8 minutes. Drain well and set aside.
Heat butter in ovenproof saute pan over medium heat. Add onion, carrot and garlic; cook 4 minutes.
Place cooked celery hearts on top of vegetables in saute pan. Season with salt and pepper; drop in bay leaf. Pour chicken stock into pan and cook 5 minutes over medium heat. Turn celery hearts over once during cooking.
Cover and cook 1 hour in oven. Drain, sprinkle with parsley
