Raw Papaya, Cabbage And Fresh Coconut Salad
|Raw papaya||1 Cup (16 tbs), grated|
|Shredded cabbage||1 1⁄2 Cup (24 tbs) (Use Very Green And Tender Vegetable)|
|Salted cashew nuts||1⁄2 Cup (8 tbs), broken|
|Seedless raisins||1⁄4 Cup (4 tbs)|
|Sour lime juice||2 Tablespoon (Extracted From 2 Fruit)|
|Freshly grated coconut||1⁄2 Cup (8 tbs)|
|Green chillies||3 , deseeded and chopped into 1 inch pieces|
|Curry leaves sprigs||2|
|Pure ghee||1 1⁄2 Tablespoon|
Place the papaya, cabbage, cashew nuts and raisins into a bowl. Mix in the lime juice and sugar. Sprinkle a little fine salt. Mix and chill.
Place 1 1/2. tablespoon of pure ghee into a small karahi. Heat and add the curry leaves, green chillies and aniseeds and fry for 2 minutes. Add the coconut, lower the heat and cook for 2 more minutes. Mix into the chilled papaya and cabbage and serve with curry and rice.
