Cold Potato Salad

Ingredients
  New potatoes 7 Pound (Raw Variety)
  Onion 1 , minced
  Salad oil 1⁄2 Cup (8 tbs)
  Cider vinegar 1⁄4 Cup (4 tbs)
  Salt 1 Tablespoon
  Pepper 1⁄2 Teaspoon
  Thinly sliced celery 3 Cup (48 tbs)
  Minced pimiento 1⁄2 Cup (8 tbs)
  Chopped parsley 1⁄2 Cup (8 tbs)
  Hard-cooked eggs 4 , diced
  Mayonnaise/Salad dressing 2 Cup (32 tbs)
Directions

Cook potatoes in jackets; peel and slice while warm.
Mix next 5 ingredients and pour over potatoes.
Cool, and add remaining ingredients.
Serve with greens if desired.
