Everyday Potato Bacon Salad
|Onion||1 , chopped|
|All purpose flour||1 Tablespoon|
|Cider vinegar||1⁄4 Cup (4 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Prepared mustard||3 Tablespoon|
|Sliced cooked potatoes||5 Cup (80 tbs)|
|Chopped parsley||1 Tablespoon|
Cook bacon until crisp; crumble; remove.
Cook onion in bacon fat until lightly browned.
Blend in flour; add bacon, vinegar, water, and seasonings; bring to boil.
Add potatoes, mixing lightly; heat through.
Sprinkle with parsley and serve or cool, store in refrigerator, and reheat before serving.
