Favorite Marinated Vegetable Salad

Ingredients
  Frozen mixed vegetables 16 Ounce, Defrosted (1 bag)
  Canned chickpeas 15 Ounce, rinsed and drained (1 can)
  Low calorie italian salad dressing 1⁄3 Cup (5.33 tbs)
  Frozen apple juice concentrate 1⁄4 Cup (4 tbs) (defrosted)
  Vegetable oil 1 Tablespoon (acceptable)
  Rice vinegar/White wine vinegar 1 Tablespoon
  Fresh lemon juice 2 Tablespoon
  Garlic/1/4 teaspoon garlic powder 2 Clove (10 gm), finely minced
  Freshly ground black pepper 1⁄8 Teaspoon (to taste)
  Lettuce leaves 8 , rinsed and dried
Directions

Combine frozen vegetables and chickpeas in a bowl.
In a jar with a tight-fitting lid, shake the salad dressing, juice concentrate, oil, vinegar, lemon juice, garlic and pepper to mix well.
Pour over vegetable-bean mixture and mix well.
Let marinate for a few hours in refrigerator.
Arrange salad over lettuce leaves.
Serve chilled.
