Favorite Marinated Vegetable Salad
|Frozen mixed vegetables||16 Ounce, Defrosted (1 bag)|
|Canned chickpeas||15 Ounce, rinsed and drained (1 can)|
|Low calorie italian salad dressing||1⁄3 Cup (5.33 tbs)|
|Frozen apple juice concentrate||1⁄4 Cup (4 tbs) (defrosted)|
|Vegetable oil||1 Tablespoon (acceptable)|
|Rice vinegar/White wine vinegar||1 Tablespoon|
|Fresh lemon juice||2 Tablespoon|
|Garlic/1/4 teaspoon garlic powder||2 Clove (10 gm), finely minced|
|Freshly ground black pepper||1⁄8 Teaspoon (to taste)|
|Lettuce leaves||8 , rinsed and dried|
Combine frozen vegetables and chickpeas in a bowl.
In a jar with a tight-fitting lid, shake the salad dressing, juice concentrate, oil, vinegar, lemon juice, garlic and pepper to mix well.
Pour over vegetable-bean mixture and mix well.
Let marinate for a few hours in refrigerator.
Arrange salad over lettuce leaves.
