Broiled Potato Salad

Ingredients
  Onion 1 Medium, chopped
  Vegetable oil 2 Tablespoon
  All purpose flour 1 Tablespoon
  Salt 1 Teaspoon
  Sugar 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Cider vinegar 1⁄3 Cup (5.33 tbs)
  Water 1⁄2 Cup (8 tbs)
  Sliced cooked potatoes 5 Cup (80 tbs) (hot)
  Parsley sprigs 3 , chopped
  Mayonnaise 2 Tablespoon
  Finely crushed potato chips 1⁄2 Cup (8 tbs)
  Shredded cheddar cheese 1⁄2 Cup (8 tbs)
Directions

Cook onion in oil 2 to 3 minutes.
Blend in flour and seasonings.
Add vinegar and water, bring to boil and pour over potatoes.
Add parsley and mayonnaise and mix lightly.
Put in greased shallow broiler-proof baking dish.
Mix potato chips and cheese and sprinkle on potato mixture.
Put under broiler until cheese is melted.
