Hot Chicken Salad

Ingredients
  Cooked chicken/Cooked turkey 3 Cup (48 tbs), cubed
  Celery 2 Cup (32 tbs), chopped
  Chopped green pepper 1⁄2 Cup (8 tbs)
  Chopped green onion 1⁄4 Cup (4 tbs)
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Lemon juice 1⁄4 Cup (4 tbs)
  Mayonnaise 1 Cup (16 tbs)
  Chopped pimiento 1⁄4 Cup (4 tbs)
  Almonds 1 Cup (16 tbs)
  Crushed potato chips 1 1⁄2 Cup (24 tbs)
  Shredded cheddar cheese 1⁄2 Cup (8 tbs)
Directions

Place cubed chicken in a 10-inch casserole.
Combine celery, green pepper, and onion in a 2-cup glass measure.
Cover with plastic wrap.
Microwave at HIGH 2 to 3 minutes or until tender-crisp.
Drain, if necessary.
Stir cooked celery mixture, salt, pepper, lemon juice, mayonnaise, pimiento, and almonds into the chicken.
Top with potato chips and Cheddar cheese.
Microwave at HIGH 5 to 6 minutes.
Let stand 2 to 3 minutes before serving.
