Turkey Ham And Black Eyed Pea Salad

Ingredients
  Turkey ham 1⁄4 Pound, diced
  Canned black eyed peas 4 Ounce, drained, rinsed
  Diced onion 1⁄2 Cup (8 tbs)
  Diced celery 1⁄2 Cup (8 tbs)
  Shredded carrot 1⁄2 Cup (8 tbs)
  Tomato 1⁄2 Medium, chopped
  Finely chopped flat leaf parsley 2 Tablespoon (Italian)
  Olive oil 1 Tablespoon
  Red wine vinegar 1 Tablespoon
  Lemon juice 1 Tablespoon
  Garlic clove 1 Small, minced
  Granulated sugar 1⁄4 Teaspoon
  Hot sauce 4 Drop
  Lettuce leaves 8
Directions

1. In large mixing bowl combine turkey-ham, peas, onion, celery, carrot, tomato, and parsley.
2. In small mixing bowl combine remaining ingredients except lettuce; pour over turkey-ham mixture and toss to coat. Cover and refrigerate until ready to serve.
3. To serve, on serving platter arrange lettuce leaves; toss turkey-ham mixture and spoon onto lettuce leaves.
