Turkey Ham And Black Eyed Pea Salad
|Turkey ham||1⁄4 Pound, diced|
|Canned black eyed peas||4 Ounce, drained, rinsed|
|Diced onion||1⁄2 Cup (8 tbs)|
|Diced celery||1⁄2 Cup (8 tbs)|
|Shredded carrot||1⁄2 Cup (8 tbs)|
|Tomato||1⁄2 Medium, chopped|
|Finely chopped flat leaf parsley||2 Tablespoon (Italian)|
|Olive oil||1 Tablespoon|
|Red wine vinegar||1 Tablespoon|
|Lemon juice||1 Tablespoon|
|Garlic clove||1 Small, minced|
|Granulated sugar||1⁄4 Teaspoon|
|Hot sauce||4 Drop|
1. In large mixing bowl combine turkey-ham, peas, onion, celery, carrot, tomato, and parsley.
2. In small mixing bowl combine remaining ingredients except lettuce; pour over turkey-ham mixture and toss to coat. Cover and refrigerate until ready to serve.
3. To serve, on serving platter arrange lettuce leaves; toss turkey-ham mixture and spoon onto lettuce leaves.
