Celeriac Salad

Ingredients
  Celeriac 1 Large (Celery Root)
  Broth/Water 1 Cup (16 tbs) (Or As Required)
  Dry mustard 1⁄2 Teaspoon
  Salt 3⁄4 Teaspoon
  Tarragon/Wine vinegar 1⁄4 Cup (4 tbs)
  Caraway seeds 2 Teaspoon
  Plain yogurt 2 Cup (32 tbs)
  Sugar 1 Teaspoon (Or To Taste)
  Cucumber 1 , thinly sliced
  Stalk celery 1 , sliced
  Lettuce 2 Ounce
Directions

Peel celeriac.
Cut into bite-sized pieces and cook, covered, in 1 inch broth or salted boiling water until tender.
Drain and cool.
It should make 3 cups.
Mix together mustard, salt, vinegar, seeds, yogurt, and sugar.
Stir into celeriac along with cucumber and celery.
Mound on lettuce.
Garnish with radishes if you like.
