Raw Mushroom Salad

Ingredients
  Button mushrooms 1 Pound, thinly sliced (500 gram)
  Finely chopped fresh chives 1 Tablespoon
  Finely chopped fresh parsley 1 Tablespoon
  Red pepper 1⁄2 , diced (capsicum)
For marinade
  Olive oil 125 Milliliter (1/2 cup)
  Lemon juice 3 Tablespoon
  White wine vinegar 1 Tablespoon
  Garlic 1 Clove (5 gm), crushed
  Chilli powder 1⁄4 Teaspoon
Directions

1. Place mushrooms in a bowl. To make marinade, combine oil, lemon juice, vinegar, garlic and chilli powder in a screwtop jar. Shake well and pour over mushrooms. Toss and leave to marinate for 2-3 hours, tossing from time to time.
2. Gently fold through chives, parsley and capsicum and serve.
