Raw Mushroom Salad
|Button mushrooms||1 Pound, thinly sliced (500 gram)|
|Finely chopped fresh chives||1 Tablespoon|
|Finely chopped fresh parsley||1 Tablespoon|
|Red pepper||1⁄2 , diced (capsicum)|
|Olive oil||125 Milliliter (1/2 cup)|
|Lemon juice||3 Tablespoon|
|White wine vinegar||1 Tablespoon|
|Garlic||1 Clove (5 gm), crushed|
|Chilli powder||1⁄4 Teaspoon|
1. Place mushrooms in a bowl. To make marinade, combine oil, lemon juice, vinegar, garlic and chilli powder in a screwtop jar. Shake well and pour over mushrooms. Toss and leave to marinate for 2-3 hours, tossing from time to time.
2. Gently fold through chives, parsley and capsicum and serve.
