Onion & Tomato Salad
|Sweet yellow onion/Sweet red onion||1|
|Basil dressing||1 Cup (16 tbs)|
|Firm ripe tomatoes||2 Large, cored and cut crosswise into 1/4-inch-thick slices|
|Freshly ground pepper||To Taste|
Cut onion crosswise into thin slices; then separate slices into rings and place in a bowl.
Prepare Basil Dressing, pour over onion, and mix gently.
Divide tomato slices equally among 4 salad plates; top equally with onion mixture.
Season to taste with salt and pepper.
Garnish with anchovies and basil sprigs, if desired.
