Onion & Tomato Salad

Ingredients
  Sweet yellow onion/Sweet red onion 1
  Basil dressing 1 Cup (16 tbs)
  Firm ripe tomatoes 2 Large, cored and cut crosswise into 1/4-inch-thick slices
  Salt To Taste
  Freshly ground pepper To Taste
Directions

Cut onion crosswise into thin slices; then separate slices into rings and place in a bowl.
Prepare Basil Dressing, pour over onion, and mix gently.
Divide tomato slices equally among 4 salad plates; top equally with onion mixture.
Season to taste with salt and pepper.
Garnish with anchovies and basil sprigs, if desired.
