|Chopped chives/Chopped onion||1 Tablespoon|
|Lemon juice||1 Tablespoon|
|Fresh dill sprigs||6 , chopped|
|Freshly chopped parsley||1 Tablespoon|
|Freshly ground black pepper||To Taste|
Peel and cube the cucumber.
Place in a colander, cover it with the salt and leave for 30 minutes.
The cucumber will 'sweat' off some of its excess juice.
Mix all the ingredients together in a large salad bowl and serve immediately, or chill for about 1 hour.
