Frozen Cranberry Salad
|Cream cheese||6 Ounce, softened (2 packages, 3-ounce each)|
|Mayonnaise/Salad dressing||2 Tablespoon|
|Canned whole berry cranberry sauce||16 Ounce (1 can)|
|Canned crushed pineapple||8 Ounce, drained (1 can)|
|Chopped pecans||1⁄2 Cup (8 tbs)|
|Whipping cream||1 Cup (16 tbs)|
|Sifted powdered sugar||1⁄2 Cup (8 tbs)|
|Vanilla extract||1 Teaspoon|
Combine first 3 ingredients, stirring until smooth.
Stir in cranberry sauce, pineapple, and pecans.
Beat whipping cream until foamy; gradually add powdered sugar, beating until soft peaks form.
Stir in vanilla.
Fold whipped cream mixture into cranberry mixture.
Spoon mixture into an 8-inch square dish.
Cover and freeze until firm.
Cut into squares, and serve on lettuce leaves.
Garnish, if desired.
