Simple Potato Salad Nicoise
|New potatoes||250 Gram|
|Fine green beans||150 Gram, trimmed|
|Cos lettuce||2 , torn into bite-sized pieces|
|Hard boiled eggs||2 , quartered|
|Plum tomatoes||4 , quartered|
|Cucumber||1⁄4 , chopped into bite-sized pieces|
|Black olives||20 , pitted|
|Wholegrain mustard||1 Tablespoon|
|Olive oil||2 Tablespoon|
|White wine vinegar||1 Tablespoon|
|Caster sugar||1 Teaspoon|
|Freshly ground black pepper||To Taste|
Cook the potatoes in boiling water until tender, adding the beans 5 minutes before the end of the cooking time.
Drain and refresh under cold, running water.
Arrange the lettuce pieces in a large salad bowl or serving dish.
Toss together the potatoes, beans, eggs, tomatoes, cucumber, and olives, and tip them over the lettuce in the bowl.
Whisk together the dressing ingredients and season well.
