Curried Broccoli & Shrimp Salad
|Broccoli flowerets||2 Cup (32 tbs)|
|Shredded carrots||1⁄2 Cup (8 tbs)|
|Onion||1 Small, thinly sliced|
|Garlic||1 Clove (5 gm), minced|
|Vegetable oil||2 Tablespoon|
|Curry powder||1⁄2 Teaspoon|
|Caraway seed||1⁄4 Teaspoon|
In 2-quart casserole, combine broccoli, carrots, onion and garlic.
In small mixing bowl, combine oil, honey, curry powder, caraway, salt and cayenne.
Pour over vegetables.
Microwave at High for 5 to 6 minutes, or until vegetables are tender-crisp,
