Countryside Potato Salad
|Garlic||2 Clove (10 gm), smashed and chopped|
|Wine vinegar||3 Tablespoon|
|Olive oil||1⁄2 Cup (8 tbs)|
|Potatoes||3 , cooked in skins and still hot|
|Mild salami slices||10 , julienned|
|Chopped red onion||4 Tablespoon|
|Green onions||2 , chopped|
|Chopped fresh parsley||1 Tablespoon|
|Chopped pimento||4 Tablespoon|
Place garlic, vinegar and oil in bowl. Season with salt and pepper. Whisk together for 1 minute.
Peel, then slice potatoes thick. Place in mixing bowl.
Add remaining salad ingredients and toss. Pour in vinaigrette and toss again. Season well and marinate 15 minutes before serving.
