Citrus Blue Cheese Salad
|Pink grapefruit||2 Medium|
|Italian salad dressing mix||3⁄4 Ounce (1 Envelope)|
|Vegetable oil||1⁄2 Cup (8 tbs)|
|Mixed salad greens||10 Cup (160 tbs)|
|Oranges||2 , peeled|
|Crumbled blue cheese||4 Ounce (1 Package)|
Peel and section grapefruit, catching juice in a bowl.
Reserve 1/4 cup juice; set grapefruit sections aside.
Combine reserved juice, dressing mix, oil, and water in a jar.
Cover tightly, and shake vigorously.
Chill at least 3 hours.
Layer half each of salad greens, grapefruit sections, and orange sections in a large salad bowl.
Repeat procedure with remaining greens and fruit sections.
Sprinkle with blue cheese.
Cover and chill at least 3 hours.
Pour dressing over salad, tossing to coat.
