Peach Chicken Salad
|Peaches||3 Medium, peeled and cubed|
|Cubed cooked chicken breast||2 Cup (32 tbs)|
|Cucumber||1 Medium, seeded and chopped|
|Finely chopped red onion||3 Tablespoon|
|For mint vinaigrette|
|White wine vinegar||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Tablespoon|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Mint||1⁄4 Cup (4 tbs)|
In a large bowl, combine peaches, chicken, cucumber and onion; set aside.
In a blender, combine the vinegar, lemon juice, sugar, mint, salt and pepper; cover and process until smooth.
Drizzle over chicken mixture; toss to coat.
Cover and refrigerate until chilled.
Use a slotted spoon to serve on lettuce-lined plates.
