Peach Chicken Salad

Ingredients
  Peaches 3 Medium, peeled and cubed
  Cubed cooked chicken breast 2 Cup (32 tbs)
  Cucumber 1 Medium, seeded and chopped
  Finely chopped red onion 3 Tablespoon
For mint vinaigrette
  White wine vinegar 1⁄4 Cup (4 tbs)
  Lemon juice 1 Tablespoon
  Sugar 1⁄3 Cup (5.33 tbs)
  Mint 1⁄4 Cup (4 tbs)
  Salt 1⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
  Lettuce leaves 4
Directions

In a large bowl, combine peaches, chicken, cucumber and onion; set aside.
In a blender, combine the vinegar, lemon juice, sugar, mint, salt and pepper; cover and process until smooth.
Drizzle over chicken mixture; toss to coat.
Cover and refrigerate until chilled.
Use a slotted spoon to serve on lettuce-lined plates.
