Delicious Potato Salad
|New potatoes||2 Pound (1 Kilogram)|
|Onions spring||6 , chopped|
|Sun dried tomatoes in oil||8 , drained and sliced|
|Balsamic vinegar||2 Tablespoon|
|Fresh basil leaves||1⁄4 Cup (4 tbs), torn (Handful Of)|
|Freshly ground black pepper||To Taste|
Cook the potatoes in boiling water until tender but still firm.
Tip into a colander to drain well.
Toss the warm potatoes and the remaining ingredients together in a large serving bowl.
Taste and adjust the seasoning, if necessary.
