Chicken Snow Pea Salad

Ingredients
  Frozen no salt added snow peas/6 ounces fresh snow peas, rinsed and trimmed 6 Ounce, Defrosted (1 Package)
  Canned mandarin oranges in light syrup 22 Ounce, drained (2 Cans, 11 Ounce Each)
  Cooked cubed chicken breast 1 Pound
  Finely chopped red onion 1⁄4 Cup (4 tbs)
  Thinly sliced water chestnuts 1⁄4 Cup (4 tbs)
  Light reduced calorie mayonnaise 1⁄2 Cup (8 tbs)
  Low fat vanilla yogurt 1⁄2 Cup (8 tbs)
  Grated fresh ginger 1 Teaspoon
  Grated lime rind 1 Teaspoon
  Salt 1⁄4 Teaspoon
  White pepper 1 Dash
Directions

Blot snow peas and oranges dry on paper towels.
Set aside.
In a bowl, combine chicken, snow peas, oranges, onion and water chestnuts.
In a small bowl, combine remaining ingredients.
Pour over chicken and vegetables and mix gently with rubber spatula.
Cover and refrigerate several hours to allow flavors to blend.
