Sweet Onion And Asparagus Salad

Ingredients
  Fresh asparagus 1 1⁄2 Pound
  Sweet onion 1 (Mayan Certified)
  Canned cannellini beans 16 Ounce, drained (1 Can)
  Extra virgin olive oil 2 Tablespoon
  Cider vinegar 2 Tablespoon (More If Desired)
  Lemon juice 1⁄2
  Blue cheese 2 Ounce, crumbled
  Salt To Taste
  Pepper To Taste
Directions

1. Blanch asparagus for 1 minute in a large pot of boiling water. Place in an ice bath to cool; remove and dry.
2. Cut onion in half and then slice.
3. Combine all ingredients in a large bowl and toss.
