Pineapple Cheese Salad
|Lime-flavored gelatin packet||3 Ounce (1 Package)|
|Cottage cheese||1⁄2 Pint (1 Cup)|
|Whipping cream||1⁄2 Pint, whipped (1 Cup)|
Drain pineapple, reserving liquid.
Add enough water to liquid to make 1 1/2 cups.
In medium mixing bowl, stir together liquid and gelatin.
Cook uncovered, 3 minutes or until mixture comes to a boil, stirring once.
Chill until thickened, but not set.
Beat until foamy.
Stir in cottage cheese and pineapple.
Fold in whipped cream.
Pour into oiled 1 1/2 -quart (6 cup) mold and chill until firm.
Unmold to serve.
