Tomato Cucumber Mozzarella Salad

Ingredients
  Olive oil 1⁄3 Cup (5.33 tbs)
  Red wine vinegar 2 Tablespoon
  Balsamic vinegar 2 Tablespoon
  Sugar 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Dried oregano 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Tomatoes 3 Medium, chopped
  English cucumber 1 , quartered and cut into 1/4-inch slices
  Green pepper 1 , chopped (Small)
  Thinly sliced onions 1⁄4 Cup (4 tbs)
  Pitted greek olives 12 , sliced
  Minced parsley 2 Tablespoon (Fresh)
  Minced basil 1 Tablespoon (Fresh)
  Mozzarella cheese 4 Ounce, cubed
Directions

In a jar with a tight-fitting lid, combine the first seven ingredients; shake well.
In a large bowl, combine the tomatoes, cucumber, green pepper, onions, Greek olives, parsley and basil.
Drizzle with the salad dressing; toss to coat.
Cover and refrigerate for at least 15 minutes.
Just before serving, stir in mozzarella cheese.
Serve with a slotted spoon.
