Belgioioso Cheese Fresh Mozzarella Salad

Ingredients
  Mozzarella 1 Pound (Bel Gioioso)
  Extra virgin olive oil 2 Tablespoon
  Breadcrumbs 1 Cup (16 tbs)
  Ground nuts 1⁄4 Cup (4 tbs)
  Mixed salad greens 3 Cup (48 tbs)
  Balsamic vinegar 1 Tablespoon
  Prosciutto slices 3 , chopped
  Kalamata olives 1⁄2 Cup (8 tbs)
  Chopped tomato 1⁄2 Cup (8 tbs)
Directions

1. Preheat oven to 425°F.
2. Cut mozzarella into eight 1/2-inch-thick slices. Marinate in olive oil for 1-2 minutes.
3. Combine bread crumbs and ground nuts. Dredge marinated cheese slices in bread crumb/nut mixture; place on a baking sheet. Bake for 3-4 minutes, or until warm.
4. Put salad greens in a bowl and toss with vinegar. Place salad greens on plates.Top with warm mozzarella and garnish with prosciutto, olives and tomatoes.
