Smoked Trout Salad With Apple And Manchego

Ingredients
  Mayonnaise 3 Tablespoon
  Cider vinegar 3 Tablespoon
  Extra virgin olive oil 1 Tablespoon
  Ground pepper To Taste
  Frisee head 1 , torn into bite-size pieces
  Skinless smoked trout fillet 1⁄2 Pound, flaked and pin bones removed
  Manchego cheese 3 Ounce, shredded
  Granny smith apple 1 , cored and cut into 1/8 inch-thick matchsticks
  Flat leaf parsley 1⁄2 Cup (8 tbs), chopped
  Sliced red onion 1⁄4 Cup (4 tbs)
Directions

1. In a small bowl, whisk the mayonnaise with the cider vinegar and olive oil and season with salt and pepper.
2. In a large bowl, combine the frisee with the flaked trout, shredded Manchego, apple, parsley and red onion. Add the dressing and toss to coat. Transfer the salad to plates and serve.

Delicious. I used this as an entree and just split it in half for my husband and I. Simply spectactular recipe. A++++
