Smoked Trout Salad With Apple And Manchego
|Cider vinegar||3 Tablespoon|
|Extra virgin olive oil||1 Tablespoon|
|Ground pepper||To Taste|
|Frisee head||1 , torn into bite-size pieces|
|Skinless smoked trout fillet||1⁄2 Pound, flaked and pin bones removed|
|Manchego cheese||3 Ounce, shredded|
|Granny smith apple||1 , cored and cut into 1/8 inch-thick matchsticks|
|Flat leaf parsley||1⁄2 Cup (8 tbs), chopped|
|Sliced red onion||1⁄4 Cup (4 tbs)|
1. In a small bowl, whisk the mayonnaise with the cider vinegar and olive oil and season with salt and pepper.
2. In a large bowl, combine the frisee with the flaked trout, shredded Manchego, apple, parsley and red onion. Add the dressing and toss to coat. Transfer the salad to plates and serve.
