Ingredients
  Dijon mustard 1 Tablespoon
  Red wine vinegar 3 Tablespoon
  Tarragon 1⁄2 Tablespoon
  Olive oil 2 Tablespoon
  Mushrooms 8 Ounce, quartered
  Red onion slices 2
  Cherry tomatoes 16 , cut in half
  Spinach leaves 4 Cup (64 tbs)
Directions

In small bowl, combine mustard, vinegar and tarragon.
Gradually add oil, whisking until slightly thickened.
In medium bowl, combine mushrooms, onion and tomatoes.
Toss with dressing and let stand 15 minutes.
Meanwhile, arrange spinach leaves on 4 individu
