Chicken And Black Eyed Pea Salad
|Canned black eyed peas||31 Ounce, drained (2 Can)|
|Chopped cooked chicken breast||2 Cup (32 tbs)|
|Minced celery||3⁄4 Cup (12 tbs)|
|Minced sweet red pepper||3⁄4 Cup (12 tbs)|
|Minced green onions||1⁄2 Cup (8 tbs)|
|Minced cilantro||1⁄3 Cup (5.33 tbs)|
|Oil free italian dressing||3 Tablespoon (Use Commercial Variety)|
|Country style dijon style mustard||2 Tablespoon|
|Red lettuce leaves||6|
Combine first 8 ingredients in a large bowl; stir well.
Cover and chill.
To serve, place a lettuce leaf on each of 6 individual salad plates; spoon 1 cup black-eyed pea mixture onto each lettuce leaf.
