Chicken And Black Eyed Pea Salad

Ingredients
  Canned black eyed peas 31 Ounce, drained (2 Can)
  Chopped cooked chicken breast 2 Cup (32 tbs)
  Minced celery 3⁄4 Cup (12 tbs)
  Minced sweet red pepper 3⁄4 Cup (12 tbs)
  Minced green onions 1⁄2 Cup (8 tbs)
  Minced cilantro 1⁄3 Cup (5.33 tbs)
  Oil free italian dressing 3 Tablespoon (Use Commercial Variety)
  Country style dijon style mustard 2 Tablespoon
  Red lettuce leaves 6
Directions

Combine first 8 ingredients in a large bowl; stir well.
Cover and chill.
To serve, place a lettuce leaf on each of 6 individual salad plates; spoon 1 cup black-eyed pea mixture onto each lettuce leaf.
