Tomatillo & Cheese Salad
|Olive oil||1⁄4 Cup (4 tbs)|
|Lime juice||2 Tablespoon|
|Cotija cheese/Parmesan cheese, crumbled||1 Cup (16 tbs), grated|
Husk and wash tomatillos.
Slice thinly and arrange on a platter or 4 salad plates.
Combine oil and lime juice; sprinkle over tomatillos and top with cheese.
Season to taste with pepper.
