Chicken Salad In Orange Cups
|Diced cooked chicken breast||1 1⁄2 Cup (24 tbs)|
|Chopped green pepper||1⁄4 Cup (4 tbs)|
|Sliced green onions||1⁄4 Cup (4 tbs)|
|Reduced calorie mayonnaise||3 Tablespoon|
|Unsweetened orange juice||2 Teaspoon|
|Ground coriander||1⁄2 Teaspoon|
|Ground ginger||1⁄4 Teaspoon|
Cut oranges in half crosswise.
Clip membranes, being careful not to puncture bottom.
Remove pulp; set aside.
Using kitchen sheats, cut edges of orange cups into scallops.
Dice reserved orange pulp.
Combine pulp, chicken, pepper, and onions in a medium bowl.
Combine mayonnaise, orange juice, honey, coriander, and ginger in a small bowl; stir well.
Pour over chicken mixture; toss gently.
Divide chicken mixture evenly among orange cups.
Cover and chill thoroughly.
Garnish with parsley sprigs.
