Ingredients
  Cooked cubed chicken breast 3 Cup (48 tbs)
  Dried cranberries 1 Cup (16 tbs)
  Celery ribs 2 , sliced
  Chopped red onion 1⁄2 Cup (8 tbs)
  Chopped tart apple 1⁄2 Cup (8 tbs)
  Slivered almonds 1⁄3 Cup (5.33 tbs), toasted
  Flaked coconut 1⁄4 Cup (4 tbs)
For dressing
  Fat free mayonnaise 2⁄3 Cup (10.67 tbs)
  Lemon juice 3 Tablespoon
  Fennel seed 1 Teaspoon, crushed
  Curry powder 1 Teaspoon
  Honey 1 Teaspoon
  Ground cinnamon 1⁄8 Teaspoon
  Lettuce leaves 14
Directions

In a large bowl, combine the first seven ingredients.
In a small bowl, combine the mayonnaise, lemon juice, fennel seed, curry, honey and cinnamon; add to chicken mixture and mix well.
