Smoked Chicken And Pasta Salad
|Uncooked penne pasta||8 Ounce|
|Smoked chicken||2 1⁄2 Pound, skinned (1 Bird)|
|Peeled seeded chopped tomato||2 1⁄2 Cup (40 tbs)|
|Diced purple onion||1⁄2 Cup (8 tbs)|
|Chopped fresh parsley||1⁄4 Cup (4 tbs)|
|Balsamic vinegar||2 Tablespoon|
|Red wine vinegar||2 Tablespoon|
|Olive oil||1 Tablespoon|
|Freshly ground pepper||1⁄4 Teaspoon|
|Fontina cheese||4 Ounce, thinly sliced|
|Pine nuts||1⁄2 Cup (8 tbs), toasted|
Cook pasta according to package directions, omitting salt and fat; drain.
Debone chicken,-discard bones.
Shred meat, and place in a large bowl.
Add pasta, tomato, and next 8 ingredients, stirring well.
Place in a 3-quart casserole; top with cheese.
Bake at 450° for 15 minutes or until cheese melts.
