Chicken And Orange Salad
|Roast chicken||1 (Use Cold)|
|Seedless green grapes||1 Cup (16 tbs)|
|Shredded lettuce||2 Cup (32 tbs)|
|Buttermilk||1⁄2 Cup (8 tbs)|
|Grated onion||1 Tablespoon|
|Lime juice||2 Tablespoon|
|Romaine lettuce/Leaf lettuce||1⁄4 Cup (4 tbs)|
|Orange slice||1⁄4 Cup (4 tbs)|
Cut enough thin slices of chicken to serve 6.
Peel oranges and dice into bowl.
Add grapes and lettuce and chill.
Mash avocado and combine with buttermilk, onion, lime juice, salt, pepper and Tabasco.
Cover 6 individual serving plates with romaine or leaf lettuce at serving time.
Put slices of chicken on one side of plate.
Spoon orange mixture on other side of plate.
Top orange salad with some of avocado mixture.
Garnish plate with orange slices.
