Fresh Pineapple Salad Boats
|Fresh pineapple||2 , chilled|
|Oranges||3 , chilled|
|Fresh whole strawberries||1 1⁄2 Cup (24 tbs), chilled|
|Ripe avocados||2 , peeled|
|Honey lime dressing||1⁄4 Cup (4 tbs)|
Cut pineapples in half lengthwise through stem portion, too.
Using grapefruit or paring knife, loosen fruit from skin close to eyes to make pineapple shells.
Discard core; dice pineapple.
Pare and slice oranges crosswise.
Line 3 pineapple shells with orange slices, pulling slices high on sides to form scalloped edge.
Slice avocados; brush with Dressing.
Toss with diced pineapple and strawberries.
Heap mixture into pineapple shells.
