Ginger Berry Spinach Salad
|Sliced fresh strawberries||1 Cup (16 tbs)|
|Low fat cottage cheese||1⁄2 Cup (8 tbs)|
|Ground ginger||1⁄2 Teaspoon|
|Torn fresh spinach||3 Cup (48 tbs)|
|Torn iceberg lettuce||3 Cup (48 tbs)|
|Sliced celery||1⁄2 Cup (8 tbs)|
|Unsalted sunflower kernels||1⁄4 Cup (4 tbs)|
Combine first 3 ingredients in container of an electric blender or food processor,- top with cover, and process until smooth.
Place torn spinach, lettuce, and celery in a large bowl, tossing gently to combine.
Pour dressing mixture over spinach mixture; sprinkle with sunflower kernels.
