Hot Potato Salad In Shells
|Baking potatoes||6 Medium|
|Minced onion||3⁄4 Cup (12 tbs)|
|Salt||1 1⁄2 Teaspoon|
|Celery seeds||1⁄2 Teaspoon|
|Vinegar||1⁄4 Cup (4 tbs)|
|Minced green pepper||1⁄2 Cup (8 tbs)|
Heat oven to 400 degrees.
Bake potatoes about 1 hour or until done.
Cook bacon until crisp, drain and crumble.
Add onion to bacon drippings and cook gently until yellow.
Add salt, pepper, celery seeds, sugar and vinegar.
Cut a thin slice from tops of baked potatoes and scoop out in side, being careful not to break the shells.
Blend potato with vinegar mixture, crumbled bacon and green pepper.
Stuff back into shells and dot with butter.
Set in baking dish and slip under broiler to heat thoroughly and lightly brown tops.
