Fresh Mushroom Salad
|Water||1 Cup (16 tbs)|
|Lemon juice||1 Tablespoon|
|Fresh mushrooms||1⁄2 Pound|
|Heavy cream||1⁄4 Cup (4 tbs)|
|Onion||1 Tablespoon, grated|
Bring the water and lemon juice to a boil.
Wash the mushrooms and slice them thin.
Add the mushrooms to the water and simmer them for 3 minutes.
Remove them from the heat and drain them.
In a slightly chilled bowl combine the cream, onion, sugar, salt, and pepper.
Mix the dressing with a spoon.
Add the drained mushrooms and coat them thoroughly with the dressing.
