Cranberry Waldorf Gelatin Salad
|Cranberry flavored gelatin||6 Ounce (2 Packages, 3 Ounces Each)|
|Boiling water||1 3⁄4 Cup (28 tbs)|
|Cold water||3⁄4 Cup (12 tbs)|
|Diced red delicious apple||3⁄4 Cup (12 tbs)|
|Diced golden delicious apple||3⁄4 Cup (12 tbs)|
|Seedless green grapes||1⁄2 Cup (8 tbs), quartered|
|Finely chopped pecans||1⁄4 Cup (4 tbs)|
|Vegetable cooking spray||1|
|Fat free cream cheese||4 Ounce, softened (Half Of An 8 Ounce Block)|
|Low fat sour cream||3⁄4 Cup (12 tbs)|
|Vanilla extract||1⁄4 Teaspoon|
Combine gelatin and boiling water in a bowl; stir until gelatin dissolves.
Stir in cold water.
Cover and chill 1 1/2 hours or until the consistency of unbeaten egg white.
Fold in diced apples, grapes, and 1/4 cup pecans.
Spoon mixture into a 5-cup gelatin mold coated with cooking spray.
Chill until firm.
Beat cream cheese at medium speed of an electric mixer until smooth.
Add sour cream, sugar, and vanilla; beat well.
Invert mold onto a serving plate; cut into 8 pieces.
