Grilled Turkey And Corn Salad

Ingredients
For turkey
  Garlic 1 Clove (5 gm), minced
  Dijon mustard 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Freshly ground black pepper 1
  Turkey breast cutlets 4
  Cherry tomatoes 1 Pint, halved
  Cooked cut corn 2 Cup (32 tbs) (Fresh, Frozen Or Canned)
  Thinly sliced scallions 1⁄4 Cup (4 tbs)
  Olive oil 1 Tablespoon
  Lemon juice 1
  Coarsely chopped parsley 1⁄4 Cup (4 tbs)
  Lettuce leaves 5
  Salt To Taste
  Pepper To Taste
Directions

TO MAKE TURKEY: Season cutlets with garlic, mustard, salt and pepper.
Grill about 4 minutes per side or until cooked through, or brush and saute in non-stick pan 2-3 minutes per side.
TO MAKE SALAD: Toss all ingredients in a bowl.
To serve, line 4 plates with lettuce leaves, spoon on salad and top with grilled turkey cutlets.
