Strawberry Plum Salad Cups
|Vanilla bean||3 Inch, split lengthwise|
|Sliced fresh strawberries||2 Cup (32 tbs)|
|Fresh plums||2 Medium, pitted and thinly sliced|
|Crisp salad shells||4|
Scrape seeds from vanilla bean into a small bowl.
Add sugar, stirring until combined.
Place strawberries in a medium bowl; sprinkle sugar mixture over strawberries, and toss gently.
Cover and chill strawberry mixture until sugar dissolves and mixture is thick.
Stir in plum slices.
Place Crisp Salad Shells on individual salad plates; spoon strawberry mixture evenly into cups, using a slotted spoon.
Garnish with fresh mint sprigs, if desired.
