Fresh Fruit Salad With Lime Ginger Syrup
|Fresh lime juice||1⁄3 Cup (5.33 tbs)|
|Water||1⁄3 Cup (5.33 tbs)|
|Fresh orange juice||1⁄4 Cup (4 tbs)|
|Ground ginger||1⁄4 Teaspoon|
|Grated lime rind||1 Teaspoon|
|Grated orange rind||1 Teaspoon|
|Cubed fresh pineapple||1 1⁄2 Cup (24 tbs) (1 Inch)|
|Cubed peeled ripe mango||1⁄2 Cup (8 tbs) (2 Large Pieces)|
|Fresh blueberries||1⁄2 Cup (8 tbs)|
|Kiwifruit||2 , peeled and cubed|
1. Combine first 6 ingredients in a small saucepan. Bring to a boil over medium heat; cook 5 minutes or until reduced to 1/2 cup, whisking constantly. Remove from heat; cool. Stir in lime and orange rinds.
2. Combine pineapple and next 3 ingredients in a large bowl. Pour syrup over fruit; toss gently to coat. Cover and chill at least 1 hour.
