Chick Pea Salad
|Chickpeas||3 Cup (48 tbs) (Cooked / Canned)|
|Celery stick||6 , trimmed and chopped|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Lemon juice||2 Tablespoon|
|Garlic||1 Clove (5 gm), crushed|
|Chopped fresh parsley||2 Tablespoon|
|Chopped onions/Chives / scallions||1 Tablespoon|
|Freshly ground black pepper||To Taste|
Mix the chick peas and celery together.
In a small bowl combine the mayonnaise with the lemon juice, garlic, parsley and onion.
Season to taste.
Stir the dressing into the chick peas and celery.
Wash the lettuce and line a salad bowl with the leaves.
Pile the chick pea salad into the centre and serve immediately.
