Golden Glow Salad
|Carrot||1 Cup (16 tbs), grated|
|Chopped salted peanuts||1⁄2 Cup (8 tbs)|
|Finely chopped chilies||1⁄2 Tablespoon|
|Mayonnaise/French dressings||1⁄4 Cup (4 tbs)|
|Pineapple rings/Apple rings||6|
Combine carrot, peanuts, chillies and salt in a bowl; pour french dressing.
Wash lettuce, separate leaves and arrange around a plate.
Place one pineapple ring on each leaf.
Put on tablespoon carrot mixture on each ring and top with a capsicum ring.
Place remaining carrot mixture in the centre of the plate.
