Flavorful Rice Salad
|Canned black beans||15 Ounce, rinsed and drained (1 Can)|
|Cooked long grain rice||1 1⁄2 Cup (24 tbs) (Cold)|
|Chopped fresh tomatoes||1 1⁄2 Cup (24 tbs)|
|Green onions||4 Small, chopped|
|Celery rib||1 , chopped|
|Chopped fresh spinach||1⁄2 Cup (8 tbs)|
|Minced fresh cilantro||2 Tablespoon|
|Fat free italian salad dressing||1⁄2 Cup (8 tbs)|
|Crumbled feta cheese||4 Ounce (1 Cup)|
In a large bowl, combine black beans, rice, tomatoes, onions, celery, spinach and cilantro.
Drizzle with the salad dressing and toss to coat.
Cover and refrigerate for 1 hour.
Just before serving, sprinkle with feta cheese
