Curry & Fruit Chicken Salad
|Red apple||1 Medium|
|Cooked chicken strips||3 Cup (48 tbs) (1/2 Inch Wide)|
|Thinly sliced celery||2 Cup (32 tbs)|
|Roasted salted peanuts||3⁄4 Cup (12 tbs)|
|Raisins||1⁄2 Cup (8 tbs)|
|Pineapple||3 Pound (1 Small Size)|
|Lettuce leaves||10 Large, rinsed and crisped|
|Minced ginger||2 Tablespoon (Candied / Crystallized)|
Core apple and cut lengthwise into thin slivers.
Combine apple, chicken, celery, 1/2 cup of the peanuts, raisins, and dressing; mix gently.
Peel and slice pineapple.
Arrange lettuce leaves on 4 dinner plates; place pineapple on lettuce and top with chicken salad.
Sprinkle salads with remaining 1/4 cup peanuts and, if desired, ginger.
