Egg And Potato Salad

Ingredients
  Eggs 2
  Potatoes 1 1⁄2 Pound
  Chopped onion/Chopped chives / chopped scallion 2 Tablespoon
  Mild mustard 1 Teaspoon
  Lemon juice/Vinegar 1 Tablespoon
  Mayonnaise 1⁄2 Cup (8 tbs)
  Freshly ground black pepper To Taste
  Salt To Taste
Directions

Hard-boil the eggs for 10-12 minutes.
Allow them to cool, then peel and chop them.
Peel the potatoes and boil or steam them until tender.
Allow them to cool, then cut them into small chunks.
Mix the chopped scallion with the eggs and potato in a large bowl.
Stir the remaining ingredients together in a small bowl, then gently mix into the salad.
