Herbed Pasta Salad
|Courgettes||2 , thinly sliced|
|Cherry tomatoes||150 Gram, halved|
|Pine nuts||2 Tablespoon, toasted|
|Freshly ground black pepper||To Taste|
|Olive oil||2 Tablespoon|
|Capers||1 Tablespoon, drained|
|Fresh parsley||2 Tablespoon|
|Fresh basil||2 Tablespoon|
|Garlic||1 Clove (5 gm)|
|Lime||1 (Use Grated Zest And Juice)|
First, make the dressing.
Put all the ingredients in a blender or food processor and process until combined.
Cook the pasta in plenty of boiling water for 8-10 minutes, or until it is tender, but still firm.
In a large bowl, gently toss together all the salad ingredients, including the pasta.
Pour the dressing over the ingredients, tossing again to mix it through.
