For vegetables
  Fresh mushrooms 1⁄4 Pound, sliced
  Green bell pepper 1 , seeded and sliced
  Cucumber 1 , peeled and sliced
  Squash zucchini/Summer squash 1 , cubed
  Carrot 1 , shredded
  Fresh green beans 1⁄4 Pound, sliced
  Fresh peas 1⁄4 Pound
  Alfalfa sprouts 1 Cup (16 tbs) (Fresh)
  Sliced pitted ripe olives 1⁄4 Cup (4 tbs)
  Scallions 4 , chopped
  Pumpkin seeds 2 Tablespoon
For marinade
  Fresh lemon juice 4 Tablespoon
  Reduced calorie italian dressing 4 Tablespoon
  Dried basil/2 tablespoons fresh basil 1 Tablespoon
  Dried thyme/2 tablespoons fresh thyme 1 Tablespoon
  Dried mint/2 tablespoons fresh mint 1 Tablespoon
  Garlic 1 Clove (5 gm), minced
  Ground black pepper To Taste
For salad greens
  Romaine lettuce head 1
  Spinach 1⁄2 Pound
  Leaf lettuce 1 Bunch (100 gm)

Place prepared vegetables in large salad bowl.
Set aside.
In a medium bowl, combine all marinade ingredients.
Stir to mix thoroughly.
Pour over vegetables.
Cover and refrigerate for at least 30 minutes.
Meanwhile, rinse salad greens, remove stems and tear into bite-size pieces.
Cover and refrigerate.
Combine marinated vegetables and salad greens.
Toss and serve.
