Stuffed Cucumber Salad

Ingredients
  Cucumber 2 (Thick)
  Onion 2 , finely chopped
  Peas/Potato 1 Cup (16 tbs), boiled
  Tomatoes 2
  Mint/Coriander 1 Tablespoon, finely chopped
  Lemon juice To Taste
  Salt To Taste
  Pepper To Taste
  Mayonnaise 1⁄4 Cup (4 tbs) (Adjust Quantity As Needed)
  Lettuce head 1
Directions

Peel cucumber and cut into 1/2 inch thick slices.
Core the pieces.
Sprinkle lemon juice on cucumber rings and let it soak for one hour.
Combine the rest of the ingredients including the cored central pieces and fill the cucumber rings with this mixture.
Wash lettuce, separate leaves and arrange on a plate.
Place stuffed cucumber rings on them.
Dot with mayonnaise and chill.
