Fresh Herb Salad

Ingredients
  Lightly packed basil leaves 1 Cup (16 tbs)
  Mint leaves 1 Cup (16 tbs)
  Italian parsley 1⁄4 Cup (4 tbs)
  Fresh oregano leaves 1⁄4 Cup (4 tbs)
  Arugula/Watercress sprigs 2 Cup (32 tbs), rinsed and crisped
  Torn butter lettuce 2 Cup (32 tbs), rinsed and crisped (Bite Size Pieces)
  Lemon 1 Large
  Extra virgin olive oil 1⁄4 Cup (4 tbs)
  Ground pepper To Taste
  Salt To Taste
Directions

In a salad bowl, gently mix basil, mint, parsley, oregano (if used), arugula, and lettuce.
Cut lemon in half and squeeze juice into a small bowl.
Whisk in oil.
Pour dressing over salad; season to taste with salt and pepper.
