Fresh Herb Salad
|Lightly packed basil leaves||1 Cup (16 tbs)|
|Mint leaves||1 Cup (16 tbs)|
|Italian parsley||1⁄4 Cup (4 tbs)|
|Fresh oregano leaves||1⁄4 Cup (4 tbs)|
|Arugula/Watercress sprigs||2 Cup (32 tbs), rinsed and crisped|
|Torn butter lettuce||2 Cup (32 tbs), rinsed and crisped (Bite Size Pieces)|
|Extra virgin olive oil||1⁄4 Cup (4 tbs)|
|Ground pepper||To Taste|
In a salad bowl, gently mix basil, mint, parsley, oregano (if used), arugula, and lettuce.
Cut lemon in half and squeeze juice into a small bowl.
Whisk in oil.
Pour dressing over salad; season to taste with salt and pepper.
